You can make a fruity melon salad and some delicious sandwiches in no time … the only thing you’ll be missing is a pair of sunglasses, a cold drink and a lovely spot outside! That’s the best way to enjoy the end of a long workday.
Tasty Summer Snack Recipes
Goat Cheese Avocado Sandwich
For 2 sandwiches:
- 4 slices of sandwich bread
- ½ avocado
- 6 slices from a log of goat cheese
- 1 hand-full of fresh spinach
- ½ small red onion
- 1 tsp of cream cheese per sandwich
- 1 tomato Salt, pepper, fresh chives
Chop the tomato, onion and avocado into thin slices. Per sandwich, spread cream cheese on one piece of bread and sprinkle chopped chives over it. Stack the other ingredients on top, season it to taste with salt and pepper and close the sandwich with the second slice of bread. Wrap the sandwiches in parchment paper and pack them into an airtight container so they’ll stay delicious and fresh!
For 2 servings:
- 500 g watermelon (about 1/2 of a small one)
- 150 g feta cheese
- 80 g fresh baby spinach
- 1 red onion
- 60 g pecan nuts/walnuts
- 1 tbsp apple cider vinegar & maple syrup respectively
- 2 tbsp olive oil
- Salt, pepper
Roughly chop up the nuts and roast them in a pan. Let them cool afterwards. Meanwhile cube the feta cheese and watermelon. Chop the onion into fine slices. Add the ingredients to a bowl with the spinach and carefully toss everything together. For the dressing, mix the vinegar, maple syrup, pepper and a pinch of salt in a separate container and finally drizzle over the salad.
